Scary Good Casseroles & Cheesecake

We love Halloween and all of the scary good fun it brings! We even have an orange frego container to complement the season. This month, we’re checking in with foodie bloggers and frego fans to see what they’re cooking and baking up that we simply have to test.

Our fall recipe search yielded some healthier alternatives and spicy options to add to our menu. We started with Fit Foodie Finds’ Sweet Potato Spinach Lasagne, moved on to their Southwestern Chicken Casserole and finally Katherine In Brooklyn’s Pumpkin Cheesecake Bars in honor of Oct 21st National Pumpkin Cheesecake Day.

The Sweet Potato Spinach Lasagne is meatless and lovely. The sweet potato puree is magical and using fresh spinach is so velvety. Even the meat-lovers in my family, who’ve been consuming my sausage lasagna with four cheeses for years were so impressed. Another bonus: the Fit Foodie Finds recipe has half the calories (820 vs 393 cal).

The Southwestern Chicken Casserole is fit for Minnesota’s spice level with cumin, garlic powder, chili powder in just the right mix. It was optional to add the cheese, and of course we did! We love the no-fuss of this recipe – only onion and cilantro to chop and we used a container of 90 sec microwave organic brown rice. Bonus – because the dish was set to 350 degrees for an hour, the chicken went in raw and cooked up perfectly!

Finally, we love a national day and since October 21 was National Pumpkin Cheesecake Day, we searched Instagram for a recipe that had an innovative crust (I found several with crushed Oreo’s as a base) and happened upon Katherine in Brooklyn. The win for cinnamon graham cracker crust, which caramelizes in the oven, and use of Greek yogurt for a touch of healthy among two 8oz blocks of cream cheese.
